How to make gluten-free pasta with your pasta maker

If you intend to make gluten-free pasta at home using your Philips Avance pasta maker, we recommend that you use pre-mixed flour, quinoa flour or buckwheat flour.

The difficult thing about making gluten-free pasta is that it is easy to break before cooking, because gluten-free flour does not give the pasta enough elasticity. Gluten is a mixture of proteins found in wheat and related grains. It gives elasticity to dough, helping it to rise and keep its shape, and often gives the final product a chewy texture as well.

Therefore, when making gluten-free pasta, we recommend adding some thickener to act as binder, such as Xanthan gum, guar gum or egg.

We suggest avoiding coconut flour, almond flour or white rice flour as they contain no binder and therefore the chance of success is low.
